Healthy Chocolate Berry Muffins Serving: 12 muffins (1 muffin per serving)
Ingredients:
1½ cups of almond meal
½ cup of vanilla Tone It Up Protein
¾ cup of unsweetened cacao
1 teaspoon of baking powder
¼ teaspoon of salt
¼ cup of pure maple syrup
1 cup of unsweetened coconut milk (from a carton)
2 eggs
1 teaspoon of vanilla extract
2 tablespoons of coconut oil, melted
1 cup of chopped strawberries
coconut oil spray
Directions:
1. Preheat oven to 350 degrees Fahrenheit.
2. Spray muffin tins with coconut oil spray.
3. In a bowl, combine all dry ingredients and whisk.
4. In a separate bowl, combine all wet ingredients (except for the strawberries) and whisk.
5. Pour the wet ingredients into the dry ingredients and stir to combine.
6. Gently fold in the strawberries.
